This recipe is something that always reminds me of home. My mom used to make these and they were so good for something so darn simple!

- If are broke, they are cheap to make.
- If you are directionally challenged in the kitchen, they are super easy
- If you have children, they love to help make them
- If you don't have much time, they are fairly quick to make.
But above all, they are soooo very good!

Pie Crust Cookies
Just like mom used to make...
Time Rating: Quick
Difficulty: Easy
Servings: 2 dozen
Prep Time: 40 minutes (maybe a little less depending on how well you can make pie crust)
What you'll need:
- 2 cups flour
- 1 teaspoon Salt
- 1/3 cup Shortening (I use the butter flavored Crisco)
- 6 tablespoons Cold Water
- 1/8 cup Sugar
- 1 tablespoon Cinnamon
- 1 stick of Butter or Margarine
What you'll do:
- Heat oven to 400°.
- Mix flour and salt in a large bowl. Cut in shortening with pastry blender until mixture is completely blended and appears crumbly.
- Mix water, 1 tablespoon at a time, by lightly tossing with a fork. Add only enough water to form mixture into a ball. The dough will be sticky and tough if too much water is added and it will crack and tear when rolled if too little is added. Tricky stuff!
- Divide dough into 2 balls and roll each out to 1/8" thick at most.
- Mix the sugar and the cinnamon into a small dish or shaker to taste. Do not make bitter...unless you like that sorta thing.
- Melt butter/margarine in the microwave or on the stove top and spread on top of the rolled out crust.
- Cut crust into medium sized bite sized pieces or use cookie cutters to make shapes and place them on an un-greased baking sheet.
- Bake for 5 - 8 minutes or until puffy.
- Remove from baking sheet immediately to a cooling rack or wax paper to cool.
- When cool, enjoy!
